Stir-Fried Turkey with Mixed Vegetables

ingredients


3/4 pound cooked turkey breast, cut in strips

Marinade

1 teaspoon sesame oil, preferably dark

2 tablespoons light soy sauce

2 tablespoons fresh ginger root, chopped

2 cloves garlic, chopped

Sesame Sauce

1/2 cup chicken stock

4 teaspoons light soy sauce

1 tablespoon red wine vinegar

1 tablespoon sesame seeds

1 teaspoon sesame oil

1/8 teaspoon black pepper

Stir-Fry

4 teaspoons peanut oil

1 small red bell pepper, in 1/4" wide strips

1 cup broccoli flowerets

1/2 cup mushrooms

1/4 cup snow peas

4 scallions, trim and chop

1 cup Chinese cabbage, sliced

directions

Marinade
:

Combine sesame oil, soy sauce, ginger, and garlic.

Add the cooked turkey, stir, and set aside to marinate for 30 minutes.

Sauce
Mix the chicken stock, soy sauce, vinegar, sesame seeds, sesame oil, and pepper in a small bowl.

Reserve.

Place heavy-bottomed skillet over high heat and add 2 teaspoons oil.

When the oil is hot, but not smoking, add the turkey strips and stir-fry them, turning with a metal spatula or slotted spoon, until meat is thoroughly heated - less than 2 minutes.

Remove turkey from skillet and keep warm.

Heat the remaining 2 teaspoons oil in the skillet.

Add the red pepper, broccoli, snow peas, and stir-fry mixture for about 1 minute.

Add the scallions and cabbage; cook the vegetables 1 minute more, stirring and tossing rapidly.

Pour in the sesame sauce and cook the mixture 2 minutes more, stirring constantly.

Stir in the turkey.
